Pearl sugar is a hidden treasure on the global culinary stage. We use them in our Liège waffles. In the US they're also known as pearl sugar waffles. These are made from yeasted dough, together with a generous amount of real butter, flour, and eggs. They're the posh cousins of the soft brioche rolls and the heavenly croissant! We have created the perfect waffles to get your mornings off to a great start.
They are said to have originated in the city of Liege for a royal prince with a bit of a sweet tooth! Most food outlets will offer the 'Brussels' waffles. This is a thick batter, made with the usual butter/eggs/flour mix. But no Pearl sugar.
The pearl sugar itself is made in a variety of sizes, exclusively in Belgium. Here at the Humber Stone Pantry, we have perfected our waffle recipe using the C40 size. It's an intensive process and the end result from these tiny white nuggets of gold, is they will add a delicious crunch and texture to every bite.
Pour melted chocolate, maple syrup or honey, toss some fruit on it, and suddenly, it's the breakfast of kings. My personal favourite? A couple of heaped tablespoons of fresh Greek yogurt, a drizzle of honey, and chuck on a small handful of granola! My breakfast heaven!
